2021 Bevel Vineyard Pinot Noir
150 cases. Clones 115, 777, Pommard. 30% whole cluster, clones fermented separately, native fermentation began after a 6 day cold soak. Punchdowns during the height of fermentation, peak temp around 85F, barelled, down right after pressing, no settling into 25% new oak. Stockinger (austrian oak) FF, and Cavin Chatillonais.
3.5 PH, 6.5 TA, 13.8% alc
Organically farmed since 2019, cane pruned on bi-lateral, minimal sprays.
Perfumed of deep red cherry, blue flowers sand crushed blue fruit. The wine enters light and dancing, then a raspberry core arrives enrobed in supple tannins. A delicate finish of sweet blue fruit.
